Our reader Cheryl really is FABULESS! Now she has a great new recipe to share with all of us!
Granola Bars
¼ cup butter
1 pkg (10 oz.) marshmallows
½ tsp vanilla
¾ cup peanut butter candy melts (or ½ cup peanut butter chips)
4 cups rice crispies cereal
1 ½ cups quick oatmeal
¾ cup chopped walnuts
Melt butter in a large sauce pan over low heat. Add marshmallows, stirring frequently. Once marshmallows are halfway melted add in candy melts (or chips.) Continue stirring until mixture is smooth. Remove from heat and stir in vanilla. Add in remaining ingredients and stir to coat evenly. Coat 9x13 pan with butter Pam and press the mixture into it. Cool and cut into granola bar size pieces. Makes about 20.
These ingredients are all items I had that needed using. My 3 year old did the quality checking and says they are yummy. I am planning on making up a few different versions to keep the kids from getting bored with them before I’ve used up my marshmallows.
Variations:
Use 2 Hershey bars (broken up) in place of the peanut butter chips and ¾ cups graham cracker pieces in place of the walnuts and you can use all your bargain ingredients and have s’more bars!
Or use white chocolate chips and raisins (or craisins.)
Or semi-sweet chips and broken pretzels.
Or cherry chips and coconut.
Use your imagination!

Now I need to get my brownie smore recipe up. Hope my family wants to eat them! I am sure they won't mind but my previous pregnancy pooch might not like it too much!

Those look fantastic!!! I love granola bars and love homemade ones but I don't like all the karo syrup they normally require!! Thanks
Do you think that peanut butter would work instead of the chips?
I think peanut butter would probably work just fine, they might just be softer set or stickier. --And a quick google search turned up some rice crispie treat recipes with a 1/2 cup of peanut butter added, so it should work great :)
