Whole Frying Chicken Recipe

Heather tells us how she uses whole frying chicken:
I start with chicken stock,  I make my own the first time then freeze and reuse.  I usually have to add a few cups of water to cover the chicken. I bring the stock to a boil and add the chicken, remove innards first.  Once it comes back up to a boil I reduce to medium high and boil for close to an hour.  Pull the chicken out and let it cool completely.  Then cut all of the meat off and into small pieces, nickle-dime size.

Enchiladas
Mix 1 whole cut up chicken with:
2 cans cream of chicken soup
1 16 oz tub of sour cream, I use light
2 cups of shredded cheese

I use 8" tortillas, fill and roll them and place in 9x13 pan using half of mixture.  I pour the remaining mixture on the top and bake at 350 until the cheese is golden and bubbly, about 35 minutes.

When I have spare time, I cook a couple of chickens up and freeze the meat so that I can just pull it out and throw the enchiladas together on one of those busy days.

Grilled Tuna Fish Cakes

This recipe is one of my favorites involving tuna fish (which I have A LOT of in my stockpile!).

Ingredients

2.5 Tuna Fish pouches-170 grams (Get FREE tuna fish pouches starting Sunday. Find out how HERE)
1  package Stove Top Stuffing Mix for Chicken (Find out how to get cheap Stove Top HERE)
3/4 cup water
1 cup shredded cheese (I've used mozzarella and cheddar)
1 carrot, shredded
1/4 cup Miracle Whip
2 tablespoons dill pickle relish (can use sweet relish instead)

Directions

1. Mix all ingredients. Refrigerate 10 minutes.
2. Heat large nonstick skillet sprayed with cooking spray on medium heat. Use small ice cream scoop to add 1/4-cup portions of tuna mixture to skillet.
3. Flatten into patties with back of spatula. Cook 6 minutes or until golden brown on both sides, carefully turning patties over after 3 minutes. 
4. Enjoy!

1 can cream of chicken soup
1 Cup milk
1 Cup chicken cooked and diced
1 bag frozen mixed veggies
¼ teaspoon cajun seasoning
Pinch of salt and pepper
Pinch of garlic salt
1 can of Pillsbury Biscuits


1. Bake biscuits according to directions.

2. Mix all other ingredients and warm over med heat.

3. Top biscuits with gravy mix.

YUM!

Tex-Mex Casserole

1 lb ground beef, cooked and drained 1 can cream of chicken soup
2 cans Ranch Style Beans
1 can rotel
2 c. shredded cheddar cheese
1 Bag Doritos (1/2 crushed)


TO PREPARE
Combine all ingredients, except chips and cheese. Place in 13 x 9 casserole dish, layer ingredients starting with crushed chips, meat mix, then cheese. Repeat until meat mixture is gone and finish with cheese. Only crush chips as using, keeping remainder to have with meal. Bake 30-45 min at 350.

How to get Post Cereal Coupons

I was so bummed there were no Post cereal coupons in my insert today (even though they were listed in the Sunday Coupon Preview, here in Idaho, we didn't get them)! I was hoping to get some, because I'm pretty certain there will be a rockin Post Cereal sale in March, just like there was last March.

• We know many other regions got this coupon.
• We also know that there is a catalina running through March 21st (get a $3.00 catalina wyb 4 boxes, or get a $4.00 catalina wyb 5 or more boxes)
  
• We are hoping for a fab sale to match with this coupon and catalina deal to get some super cheap cereal.
  

Last year, I purchased 60 boxes of Post Cereal. Most if it was Honey Bunches of Oats. The ONE cereal that EVERYONE in my family LOVES. I didn't buy enough. I want to buy enough THIS time, that will last me until I can get it for less than $.50 a box again.

So what am I going to do? That's right, I'm going to head to eBay (well, I already did). There are a few things to consider:

• We obviously can't guarantee that the fabulous sale will run the exact same time as the catalina does (like last year). Although it seems they like to do these simultaneously to push a lot of product.
• The coupons I want don't expire until 4/11
• This cereal is a popular "staple" in my home. I'm willing to take the risk right now to purchase a lot of coupons at a cheap price (rather than wait until the sale is on and the prices go up... case in point: the $3/5 Quaker coupons). I found a set of 20 for $1.00 (buy it now), and the shipping was $.99. The seller had more than 10 sets available. And for additional sets, the shipping was $.39 for each additional set I added to my order.
  
• Even if the stars don't align and this sale isn't as fab as it was last year, I'll still use these coupons. BECAUSE this is something my family will use.

I found this website called MakeItEasyTakeItEasy.com on the back of the 3/3 Albertsons ad and decided to check it out. After clicking around for a bit, I found the page where you can sign up to get a booklet of $20.00 worth of coupons mailed to you!

Simply fill out the form with your name, address, and preferred card number and then wait for 2-3 weeks for your coupon book (limit 1 per person or household).
