FabuLESS Freezer Cooking: No Mystery Meat Marinade

WELCOME WFMW readers! This is one way we save A LOT of money (plus headache, stress...) each month, by doing freezer meals! Click to view the first post in the series which has links to all posts in the series.

NO MYSTERY: MARINATED BEEF, CHICKEN, OR PORK

1 FAMILY

3 Tbsps red wine vinegar 1/3 cup olive oil

2 cloves Garlic, chopped

1/4 to 1/2 tsp crushed red pepper flakes

1 Tbsp thyme

1 Tbsp parsley

Gravy:

2 Tbsp butter

2 Tbsp shallots, or onion

6 mushrooms, optional

2 Tbsp flour

1 c. chicken, beef, or veggie stock



6 FAMILIES


18 Tbsp red wine vinegar

2 c. olive oil

12 cloves Garlic, chopped

1 ½ tsp – 3 tsp crushed red pepper flakes

6 Tbsp thyme

6 Tbsp parsley


Gravy:
12 Tbsp butter

12 Tbsp shallots, or onion

24 mushrooms, optional

12 Tbsp flour

6 c. chicken, beef, or veggie stock

TO FREEZE: Combine the ingredients for the marinade all together in a Ziploc bag, add the meat.
TO PREPARE: Thaw. Pan cook meat with marinade, until done to your liking. Remove the meat, add the butter, then onions and mushrooms saute for 3 minutes over moderate heat. Add flour to the pan and cook another 2 minutes, stirring constantly. Whisk in stock and reduce for another minute. Pour over meat and serve.
