Funeral Potatoes

6 c. frozen grated potatoes (could try fresh from this weeks sale at .99 for 10 lbs)
½ c. margarine or butter 
2 cans cream of chicken soup
1 ½ c grated cheddar cheese 
¼ c very finely chopped onion
2 c sour cream .40 a few weeks ago
¾ c corn flakes you have cereal right?! Also good with Ritz crackers
¼ c melted butter


Mix all ingredients throughly and place in casserole dish. Mix cornflakes or crackers and melted butter, sprinkle over top. 
Bake covered at 350 for 45 min, uncovering last 15 min.


Serve with your frozen or canned veggies and pork chops or chicken from your freezer.

This cracks me up! I've never heard them called Funeral Potatoes! I have a similar recipe and it's just hashbrown casserole (or cheesy potatoes). But, Funeral Potatoes is MUCH more interesting! ;)
