LABORING Today - Fall Cleaning and Tomatoes

Happy Labor Day!

In honor of LABOR Day, I am LABORING with my kids and decluttering rooms and closets!

While I don't have the energy (I am 9 mo preggo you know) to do a full blown "Spring Cleaning in the Fall " today (which I LOVE doing!), there is a FABULOUS eBook by one of my FAVE bloggers, simplemom (a mere $7 to download).

SO - no computer for me today!

All the deals and coupon matchups you could ever dream of will return on Tuesday (unless any of my fellow blogging buddies have something they are dying to share!)

ps - I have tomatoes coming out of my ears (cherry, grape, pear, and regular) - if you have any FAB recipes for me, PLEASE share here or email them to me! Personally I love to eat them with cottage cheese (and cucumbers if I have them) with pepper sprinkled on top. BUT I need more ideas!

Here is my favorite way EVER to eat tomatoes: cut them into round slices and put fresh mozzarella, olive oil, and a little bit of salt on top. YUM. You can usually find fresh mozarella at Costco. It comes in a little package with water in it to keep it fresh. I'm not sure where an Italian import store is around here (of if there's one in Boise) but they would have it for sure.

You can also freeze them to make spaghetti sauce with later. Just boil them and peel them and then puree them in a food processor or blender. Freeze the puree and use it to make sauce whenever you need.

I just made this tomato chutney last night and I am in LOVE! http://www.anoregoncottage.com/2009/09/addictive-tomato-chutney.html
I wasn't sure it was for me, but wanted to do something a little different with my tomatoes this year. I just had it on my eggs this morning and it was spectacular!
P.S. She tells how to can this but also says that freezing is good too.

I love thin sliced tomatoes on a sandwich with sharp cheddar!!!

I have also learned this year that you can just wash your tomatoes, throw them in a freezer bag and freeze. When you get them out later the skins just fall off and you can use them in spaghetti sauce, soups, stews...
If you have the freezer space this was crazy fast!!!

The selection changes every day, and once their gone, their gone. The site is showing retail prices of 39.00 - 219.00 so I'm thinking these should be pretty good quality costumes.

This is my Fast and Favorite Tomato recipe:

Skillet Baked Ziti

6 (yes 6)cloves garlic minced
1/4 c. olive oil
1 tsp salt
1/8 tsp crushed red pepper
4 cups diced tomates (or 2 cans)
3 cups water
4 cups penne or ziti pasta
1/2 c parmesan cheese
1/2 cream
1 tsp basil (or 1/4 c fresh basil)
1 cup mozzarella

Saute grlic, salt, and red pepper in olive oil for 3 or 4 minutes. Add water, tomatoes, and pasta. Let boil all together for 10 to 12 minutes, or until pasta is almost tender. Add parmesan, cream, and basil. Sprinkle mozzarella over top and bake for 10 to 15 minutes or until chees is golden brown.

This recipe is SO yummy and only uses 1 pan! (make sure you start with a pan that can be on the stove top, and go in the oven) Even my kids LOVE this!

Cut up some tomatoes, cucumbers and a little red onion. Add about half a bottle of Italian dressing. Mix together and refrigerate. This makes a quick, easy, tasty salad for picnics or spur of the moment get togethers.
